Four things, once a day, and only if you leave the daily check on: your licence key, your domain, the version you run and your PHP version. That is how we know which release to offer you. Plans, studies, fleets, telemetry and reports stay in your database on your server. We never see them.
It is the same package. auddomate.com runs the release you can download, and every release we publish lands in both places on the same day. There is no cut-down edition and no feature held back for the hosted version.

A Software Licence Agreement and a Data Processing Agreement, both published in full on this site so your reviewer can read them before speaking to anyone. Both can be sent as a PDF for signature with your organisation and term filled in, and we are willing to sign your own paper instead — we will read it and say plainly which clauses we cannot accept. We hold no security certification today and will not imply one.
Yes. It is plain PHP and readable by design, which is part of the point for a security review. A modified installation will fail its checksum and stop receiving updates, so treat changes as a fork you maintain yourself.
Your installation keeps running and your data stays yours, in your database. What stops is downloads and updates, and they come straight back when the licence is renewed.
PHP 7.0 or newer with the usual extensions, MySQL 5.7 or newer, and a web root you can write to. A shared cPanel host is enough; so is a container. No build step, no queue, no background workers.
